Cheesy Hash Brown Casserole Batch Cook & Freeze
This is a dish we’ve been making for years and years because it is simple, truly delicious, and a certain crowd pleaser. It's only 4 ingredients, but the results will not disappoint! You can even assemble beforehand and freeze until you are ready to bake. It’s perfect for Christmas morning or when you need to feed a crowd without the mess.

Since we like to batch cook most everything, the same goes for hash brown casserole. This recipe freezes perfectly and makes it easy to have just one serving of hash brown casserole at a time. We like to use these cubes to freeze our meals and dishes because it portions everything perfectly and makes storing in the freezer a breeze.
This is an example of a common breakfast here. An egg with a side of hash brown casserole. Simple and delicious!
Cheesy Hash Brown Casserole Recipe
Makes 12 servings
Ingredients:
2 bags of frozen shredded potatoes
3 cups shredded medium or sharp cheddar cheese
24 oz. sour cream
1.5 packets of ranch DIP mix
Directions:
Mix together frozen shredded potatoes and cheddar cheese.
Add ranch packets to sour cream container and carefully mix together.
Pour sour cream mixture onto potatoes and cheese and mix. Make sure it is thoroughly mixed so everything is distributed evenly.
If baking now, add mixture to a baking dish and bake at 365 F for 30-45 minutes. It should be bubbly and the top should be golden brown.
Freeze the rest (or freeze it all) in cubes as is- do not bake first. There should be just enough to fill 12 freezer cubes.
Directions after freezing:
Bake 2 frozen hash brown casserole cubes in the oven at 375 for 30 minutes. If you want to bake more cubes at a time, use a bigger baking dish and add 5 minutes for every two cubes added.
Tip: Baking casseroles can be different for everyone based on your oven. We usually bake at a lower temperature as our oven is small and tends to cook at a higher temperature than what is displayed. Feel free to adjust according to your situation, but know that this casserole (and most all casseroles) are very forgiving. If you notice it’s getting a little too brown on top before it’s done, you can turn the temperature down a little and/or cover with foil to prevent further browning. If it doesn’t seem bubbly enough when the timer goes off, let it cook a bit longer.
