The Easiest Pantry Granola

The other night both of us were craving cereal, but cereal is not something we keep in the house. However, we do always have PLENTY of ingredients on hand to make granola. We even went through a phase many years ago where we made it without oats because you can basically make granola out of almost anything.

The good thing about this recipe is you can sub out a lot of the ingredients for things you have on hand. Don’t have quinoa or don’t want to use quinoa? Just add more oats or nuts of seeds of your choice. This goes for basically anything on this list. We like adding quinoa if we have it because it give it extra crunch. Use whatever neutral oil or fat you have on hand and whatever sweetener you like or have. A good rule of thumb is to taste the mixture before you bake. It should taste a little more sweet than you want before baking and every piece should be slightly damp.

Pantry Granola Recipe

Makes 6 cups

Ingredients:

  • 4 cups old fashioned rolled oats

  • 1/4 cup quinoa

  • 1/4 cup chia seeds

  • 1/2 cup sugar

  • 1/2 cup chopped nuts (we used pecans and walnuts)

  • 1 Tbsp. cinnamon

  • pinch of salt

  • 1 Tbsp. vanilla

  • 1/2 cup maple syrup

  • 3 Tbsp. melted Coconut Oil

Directions:

  1. Mix together oats, quinoa, chia seeds, sugar, chopped nuts, cinnamon, and salt together in a large bowl.

  2. Mix together oil, syrup, and vanilla in a separate bowl.

  3. Add the oil mixture to the dry ingredients and stir well making sure to coat all the dry ingredients in the wet.

  4. Pour mixture onto a baking sheet and bake at 350 F for 10 minutes. Stir the mixture on the baking sheet and bake for another 10 minutes. Let cool before storing in an airtight container.

Tip: Keep a close eye on the granola when it is baking in the oven. It can go from lightly toasted to burnt very quickly. You may need to stir more frequently or take it out before time is up.
